Balsamic-Honey Roasted Vegetables

Ingredients
  1. 1/3 cup Sue Bee® Honey
  2. 5 large carrots
  3. fresh ground black pepper fresh ground black pepper
  4. 1/2 teaspoon salt
  5. 2 teaspoons fresh rosemary
  6. 1 teaspoon garlic powder
  7. 1/4 cup balsamic vinegar
  8. 1/4 cup olive oil
  9. 3 stalks celery
  10. 6 garlic cloves
  11. 3 yellow beets
  12. 1 large parsnip
  13. 4 turnips
  14. 1 large rutabaga
  15. 1 large yam
  16. 2-3 small boiling potatoes
Instructions
  1. Preheat oven to 375 F.
  2. Cut the bottom 1/4 inch of each garlic clove off but do not peel cloves.
  3. Toss ingredients in a deep baking dish.
  4. Roast, uncovered, for approximately 30 minutes or until all vegetables are soft throughout.
  5. Toss vegetables and turn heat up to 400 F. Roast until vegetables are browned and caramelized – 15-20 minutes.
  6. Serve hot or at room temperature
