Blueberry-Walnut Wheat Germ Muffins

Ingredients
  1. 1/4 cup Sue BeeĀ® Honey
  2. 1/2 cup all-purpose flour
  3. 1 teaspoon vanilla extract
  4. 1 cup skim milk
  5. 1/4 cup molasses
  6. 1/4 cup canola oil
  7. 1 egg
  8. 1/2 walnuts
  9. 1 teaspoon salt
  10. 2 teaspoons baking powder
  11. 1 cup wheat germ
  12. 1/4 cup flax seed
  13. 1/2 cup oatmeal
  14. 1/2 cup whole wheat flour
  15. 1 cup blueberries
Instructions
  1. Preheat oven to 400 F.
  2. In a large bowl, combine dry ingredients; stir in walnuts.
  3. In a medium bowl, beat together Sue Bee Honey, egg, oil and molasses; beat in milk and vanilla extract.
  4. Add liquid ingredients to dry, stirring just until mixed.
  5. Gently fold in blueberries.
  6. Line muffin cups with paper liners, and divide batter among cups.
  7. Bake for 18-20 minutes, or until a toothpick inserted into center comes out clean and tops are lightly browned.
  8. Remove from oven and let cool for a few minutes before turning out of muffin tin onto a cooking rack.
