Cauliflower and Sweet Potato Curry Soup

Ingredients
  1. 1 1/2 tablespoons Sue BeeĀ® Honey
  2. 2 teaspoons vegetable oil
  3. 3 tablespoons low-fat sour cream
  4. 3 1/2 cups sweet potatoes
  5. 4 cups vegetable stock
  6. 2 cups cauliflower
  7. 1/8 teaspoon fresh ground black pepper
  8. 1/8 teaspoon salt
  9. 1/2 teaspoon cinnamon
  10. 1 teaspoon curry powder
  11. 1 cup onion
  12. 2 teaspoons garlic
  13. 1/4 cup cilantro
Instructions
  1. In a large saucepan sprayed with vegetable spray, heat the oil.
  2. Saute the garlic and onion until softened, about 5 minutes.
  3. Add the Sue Bee Honey, curry powder, cinnamon, salt, pepper, cauliflower, stock and sweet potatoes; bring to a boil.
  4. Cover, reduce the heat and simmer for 25minutes or until the potatoes are tender.
  5. Transfer to a food processor or blender and puree until creamy and smooth.
  6. Return to the saucepan and thin with more stock if desired.
  7. Ladle into bowls. Garnish with a dollop of sour cream and cilantro.
