Ingredients
  1. 1/4 cup Sue BeeĀ® Honey
  2. 1/2 cup soy sauce
  3. 1 red pepper
  4. 1 green pepper
  5. 1 (8 ounce) package mushrooms
  6. 2 cups fresh pineapple
  7. 1/2 pounds bacon
  8. 4 skinless boneless chicken breast halves
  9. 1/2 cup canola oil
  10. 2 tablespoons scallions
  11. 1 tablespoon fresh ginger
  12. 1 fresh garlic clove
  13. 1/4 cup balsamic vinegar
  14. wooden skewers
Instructions
  1. In a large bowl, mix the Sue Bee Honey, soy sauce, vinegar, garlic, ginger, scallions and canola oil.
  2. Take 1/4 cup of marinade (to be used for basting) and set aside.
  3. Place chicken into the marinade and stir to coat.
  4. Cover and marinate in the refrigerator at least 1 hour.
  5. Wrap the chicken chunks with bacon, and thread onto skewers so that the bacon is secured.
  6. Alternate chicken with mushrooms, peppers and pineapple chunks.
  7. Lightly oil the grill grate.
  8. Arrange skewers on the heated grill.
  9. Cook 15 to 20 minutes, brushing occasionally with remaining soy sauce mixture, until bacon is crisp and chicken juices run clear.
