Chocolate Chip Pancakes

Syrup
  1. 1 cup Sue BeeĀ® Honey
  2. 1/2 cup butter, cubed
  3. 1 to 2 teaspoons ground cinnamon
  4. 2 cups all-purpose flour
  5. 2 tablespoons baking powder
  6. 1 teaspoon salt
  7. 1/4 cup sugar
Pancakes
  1. 2 eggs
  2. 1 1/2 cups milk
  3. 1/4 cup vegetable oil
  4. 1/2 cup miniature chocolate chips
Instructions
  1. Combine syrup ingredients in a 2-cup microwave-safe bowl.
  2. Microwave, uncovered, on high until butter is melted and syrup is hot, stirring occasionally.
  3. In a bowl, combine flour, baking powder, salt and sugar.
  4. For pancakes, combine eggs, milk and oil; add to dry ingredients and mix well.
  5. Stir in chocolate chips.
  6. Pour 1/4 cup of batter onto a lightly greased hot griddle for each pancake.
  7. Turn when bubbles form on top.
  8. Cook until second side is golden brown.
  9. Keep warm.
  10. Serve with warm syrup poured over pancakes.
