Chocolate Covered Caramel Corn

CARAMEL CORN
  1. 1/2 cup Sue BeeĀ® Honey
  2. 7 quarts popped pop corn
  3. 2 cups brown sugar
  4. 1 teaspoon salt
  5. 1/2 cup oleo
  6. 1 teaspoon vanilla
  7. 1 teaspoon baking soda
CHOCOLATE COATING
  1. 1/2 cup Sue BeeĀ® Honey
  2. 1-12 oz. package semi-sweet chocolate chips
  3. 2 tablespoons water
  4. 1/2 cup oleo
CARAMEL CORN
  1. Bring all ingredients, except pop corn and baking soda, to a boil.
  2. Continue boiling for 5 minutes.
  3. Remove from heat and stir in baking soda until foamy.
  4. Place popcorn in a large pan or 2 cookie sheets.
  5. Pour foamy mixture evenly over pop corn and stir in.
  6. Bake caramel corn mixture for 1 hour at 250 F, stirring every 15 minutes.
  7. When done caramel corn will be well coated.
  8. Let cool and break apart.
CHOCOLATE COATING
  1. Stir all ingredients in a microwave safe bowl.
  2. Microwave 2 to 4 minutes stirring well after every 30 seconds, until melted.
  3. Do not over microwave or chocolate will get chunky.
  4. Pour melted chocolate mixture over cooled caramel corn and mix until well coated.
  5. Spread evenly over 2 greased cookie sheets and refrigerate or freeze until chocolate hardens.
  6. Refrigerate any uneaten caramel corn.
