Ingredients
  1. 1/4 cup Sue BeeĀ® Honey
  2. 10 tablespoons butter
  3. 1 1/2 cups powdered sugar
  4. 1-2 teaspoon lemon juice
  5. 1 teaspoon butter
  6. 1/2 teaspoon salt
  7. 1/2 teaspoon baking soda
  8. 1 1/2 teaspoons baking powder
  9. 2 1/2 cups all-purpose flour
  10. 1 cup finely grated raw sweet potato
  11. 1 egg
  12. 1 teaspoon ground nutmeg
  13. 1 tablespoon lemon zest
  14. 1/4 cup sugar
  15. 1 tablespoon water
Instructions
  1. Cream together butter and sugar in bowl.
  2. Blend in Sue Bee Honey, lemon zest, nutmeg and egg.
  3. Fold in sweet potato.
  4. In separate bowl; sift flour, baking powder, baking soda and salt.
  5. Add it to the first mixture and blend well.
  6. Arrange cookie dough by rounded teaspoons on ungreased cookie sheet.
  7. Bake at 350 F for 7 minutes.
  8. To make glaze, use a wooden spoon to combine all ingredients in glass container until smooth.
  9. Add more water by the drop until glaze is easy to spread on cooled cookies.
