Cream of Tomato Soup

Ingredients
  1. 1/4 teaspoon Sue BeeĀ® Honey
  2. 3 1/2 cups cooked tomatoes
  3. 4 ounces cream cheese
  4. 3 tablespoons dry sherry
  5. fresh ground black pepper fresh ground black pepper
  6. 1/2 teaspoon dried basil
  7. 1/2 teaspoon dried rosemary
  8. 1/2 teaspoon salt
  9. 1 clove garlic
  10. 1 1/2 cups chopped onions
  11. 1 tablespoon butter
  12. fresh parsley fresh parsley
Instructions
  1. Cook the onions and garlic in the butter with the salt until the onions are soft and translucent.
  2. Add the herbs and pepper, and saute a few more minutes.
  3. Add tomatoes, sherry and Sue Bee Honey.
  4. Cover and simmer 30-40 minutes.
  5. Cut the cream cheese into small cubes and add to the hot soup.
  6. Continue cooking and stir until smooth.
  7. Serve garnished with fresh parsley.
