Curried Butternut Squash Soup

Ingredients
  1. 2 tablespoons Sue BeeĀ® Honey
  2. 1 tablespoon canola oil
  3. 2 tablespoons butter
  4. salt and pepper
  5. 1 teaspoon curry powder
  6. 1 tablespoon curry powder
  7. 6 cups low sodium chicken broth
  8. 1 (2 1/2 lb) butternut squash
  9. 4 garlic cloves
  10. 1 medium onion
  11. plain low-fat yogurt plain low-fat yogurt
Instructions
  1. Heat oil over medium heat in a 6qt stockpot.
  2. Add onions and garlic and saute until soft, about 6 to 7 minutes.
  3. Add squash, broth, curry powder and salt and pepper and bring to a boil.
  4. Reduce heat and simmer until squash is tender, about 15 to 20 minutes.
  5. Remove from heat and stir in Sue Bee Honey and butte. Puree until smooth.
  6. Season with salt and pepper to taste.
  7. Ladle into serving bowls and add a dollop of yogurt.
