Date, Honey and Walnut Loaf

Ingredients
  1. 1/3 cup Sue BeeĀ® Honey
  2. 1 cup chopped dates
  3. 1/2 milk
  4. 1/2 teaspoon ground ginger
  5. 1/2 teaspoon baking soda
  6. 2 teaspoons cinnamon
  7. 2 teaspoons baking powder
  8. 2 cups plain flour
  9. 2 teaspoons vanilla
  10. 2 eggs
  11. 1/3 cup firmly packed brown sugar
  12. 1/3 cup butter
  13. 1/3 cup chopped walnuts
Instructions
  1. In bowl, soak chopped dates in 1/2 cup boiling water; let cool.
  2. In large bowl, beat Sue Bee Honey, butter and sugar until fluffy.
  3. Beat in eggs, one at a time.
  4. Stir in date mixture and vanilla.
  5. Combine flour, baking powder, cinnamon, baking soda and ginger; stir in the date mixture alternately with milk, making 3 additions of dry ingredient and 2 of milk and adding walnuts with last addition.
  6. Pour into 4 - 5 cup loaf pan.
  7. Bake in 350 F for 1 hour or until tester comes out clean.
  8. Allow to cool in pan on rack for 10 minutes.
  9. Transfer to rack to cool.
