Hawaiian Rice Salad

Ingredients
  1. 3 tablespoons Sue BeeĀ® Honey
  2. 1 cup long grain rice
  3. 1 clove garlic
  4. 2 tablespoons pineapple juice
  5. 4 tablespoons lemon juice
  6. 1/2 stalk celery
  7. 1/2 cup cucumber
  8. 1/3 cup raisins
  9. 1/4 cup walnuts
  10. 1/2 cup mango
  11. 3/4 cup pineapple chunk
  12. 1/2 teaspoon turmeric powder
  13. 2 cups vegetable stock
  14. Salt and pepper
Instructions
  1. Wash rice thoroughly.
  2. In a pan, bring stock and turmeric powder to a boil.
  3. Add rice.
  4. Simmer until rice is cooked.
  5. Drain, rinse and spread rice on a tray to cool.
  6. Whisk dressing ingredients together in a bowl.
  7. Taste and adjust seasoning.
  8. In a bowl, mix rice with pineapple, mango, walnuts, raisins, cucumber and celery.
  9. Gently fold in the dressing.
  10. Serve.
