Sue Bee® Nutty Cookies
Ingredients
- 1/3 cup Sue Bee® honey
- 1/3 cup margarine
- 1/4 cup pecans
- 1 tbsp flax seed
- 1/4 tsp nutmeg
- 1/4 tsp allspice
- 1/2 tsp cinnamon
- 1 tsp baking soda
- 1/2 tsp baking powder
- 1 cup whole wheat flour
- 1 1/4 cups all-purpose flour
- 1 tsp brandy extract
- 1 egg
- 2 tbsp milk
- 250 ml black beans
- 3/4 cup brown sugar
- 1 cup raisins
Directions
- Process black beans with the milk in a food processor until well pureed.
- Set aside.
- In a mixing bowl, cream margarine and brown sugar.
- Stir in Sue Bee® honey, bean puree, egg and brandy extract.
- In a separate bowl, combine all purpose flour, whole wheat flour, baking powder, baking soda, cinnamon, allspice, nutmeg and ground flaxseed.
- Add to margarine mixture and stir until well mixed. Stir in chopped pecans and raisins.
- Drop by heaping teaspoonfuls onto cookies sheet. Flatten slightly with a fork dipped in water.
- Bake at 350 F for 12 to 14 minutes.
