Healthy Wheat Muffins with Fruit of Choice

Ingredients
  1. 1/2 cup Sue BeeĀ® Honey
  2. 1/2 cup raisins
  3. 3 egg whites
  4. 1/2 cup applesauce
  5. 1/2 cup 2% low-fat milk
  6. 1 teaspoon vanilla
  7. 1 1/2 cups wheat flour
  8. 1 teaspoon cinnamon
  9. 1/2 teaspoon salt
  10. 1 teaspoon baking soda
  11. 1 tablespoon baking powder
  12. 1/2 cup all-purpose flour
  13. 1 cup diced and drained fruit
Instructions
  1. Sift together flour, baking powder, baking soda and spices.
  2. Add sugar and stir to combined.
  3. Next add wet ingredients and any fruit of your choice.
  4. Pour Batter almost full into 18 muffin tins lined with cupcake papers.
  5. Top with a sprinkle of light brown sugar mixed with some cinnamon.
  6. Preheat oven to 375 F and bake for 35-45 minute.
  7. Test with a toothpick to make sure they are done.
  8. Let cool completely.
