Honey Carrot Muffins w/ Raisins & Dried Pineapple

Ingredients
  1. 1 cup Sue BeeĀ® Honey
  2. 2 teaspoon ground cinnamon
  3. 2 teaspoon baking soda
  4. 1 1/2 cups all-purpose flour
  5. 1 cup whole-wheat flour
  6. 3/4 cup pineapple
  7. 1/2 cup pecans
  8. 1 cup raisins
  9. 3 cups carrots
  10. 1 teaspoon vanilla extract
  11. 3/4 cup canola oil
  12. 3/4 cup buttermilk
  13. 3 eggs
  14. 1/2 teaspoon salt
Instructions
  1. Preheat oven to 375 F.
  2. Grease 3 standard muffin tins and set aside.
  3. In a large bowl, beat eggs with a wire whisk.
  4. Add buttermilk, oil, Sue Bee Honey, and vanilla, and mix together until well blended.
  5. With wooden spoon, stir in carrots, raisins, pecans, and pineapple.
  6. In a small bowl, mix together flours, soda, cinnamon and salt.
  7. Gently fold the dry ingredients into the carrot mixture and mix until just blended.
  8. Spoon the batter into cups, filling to the top. Bake for 25 minutes, or until muffins spring back when touched.
  9. Let cool for five minutes in the tins, then transfer to cooling rack.
