Honey-Lemon Chicken Thighs

Ingredients
  1. 1/8 cup Sue BeeĀ® Honey
  2. 1 lemon
  3. 1 1/4 cups chicken stock
  4. 1 tablespoon soy sauce
  5. 3 tablespoons oil
  6. 8 chicken thighs
  7. 1/2 cup onion
  8. 3/4 cup rice
  9. 1/4 teaspoon pepper
Instructions
  1. Grate 1 teaspoon of zest from the lemon, and press 1 tablespoon of juice.
  2. Combine the zest and juice with Sue Bee Honey, stock and soy sauce.
  3. Heat oil in a large wok with a cover and brown the thighs.
  4. Remove the thighs from oil and add the onion; saute until soft.
  5. Add the rice, pepper, and broth mixture; top with the browned thighs.
  6. Cover and simmer for 30 minutes or until the liquid is absorbed.
