Honey and Spice Pears

Ingredients
  1. 1 1/2 cups Sue BeeĀ® Honey
  2. 5 lbs pears
  3. 4 cups cranberry juice
  4. 1 cup wine vinegar
  5. 3 tablespoons chopped candied ginger
  6. 8 inches cinnamon sticks
  7. 1/2 teaspoon whole cloves
  8. 1/4 teaspoon red food coloring
Instructions
  1. Wash, peel, core and halve pears.
  2. In 4-6 qt. kettle combine remaining ingredients.
  3. Bring to boiling; reduce heat; simmer uncovered 5 minutes.
  4. Add pears. Cook, turning often, until almost tender, about 5 minutes.
  5. Pack hot pears into hot sterilized jars, leaving 1/2 inch head-space.
  6. Cover with hot syrup, leaving 1/2 inch head space.
  7. Adjust lids. Process in boiling water bath for 15 minutes for pints.
