Ingredients
  1. 1/2 cup Sue Bee® Honey
  2. 3 tablespoons olive oil
  3. 3 tablespoons fresh cilantro
  4. 2 (16 ounce) cans coconut milk
  5. 1/2 cup sherry wine
  6. 8 cups vegetable stock
  7. 1/2 teaspoon red pepper flakes
  8. 1 teaspoon cumin
  9. 2 teaspoons ground coriander
  10. 2 teaspoons yellow curry powder
  11. 3 lbs carrots
  12. 2 celery ribs
  13. 1 large Spanish onion
  14. 1 tablespoon minced ginger
  15. 4 garlic cloves
  16. salt and pepper
Instructions
  1. Heat stockpot, add olive oil, garlic, ginger, onion, celery, and carrots.
  2. Saute for 10 minutes.
  3. Add curry, coriander, cumin, red pepper flakes, sherry and stock.
  4. Bring to a boil.
  5. Reduce heat and let simmer for 35 minutes.
  6. Remove from heat and add Sue Bee Honey, coconut milk, cilantro, salt and pepper.
  7. Puree the soup in the pot using a hand blender.
  8. Add more Sue Bee Honey if you like it sweeter.
