Oven Baked Vegetable Soup

Ingredients
  1. 2 teaspoons Sue BeeĀ® Honey
  2. 1 onion
  3. 4 ripe tomatoes
  4. 2 bay leaves
  5. 4 rosemary sprigs
  6. 4 tablespoons vegetable oil
  7. 175 g swede
  8. 1 large parsnip
  9. 1 leek
  10. 2 large carrots
  11. 2 garlic cloves
  12. 5 cups vegetable stock
Instructions
  1. Preheat oven to 400 F.
  2. Toss all vegetables except tomatoes with Sue Bee Honey and oil in a roasting dish. Add the herbs and roast for 30 minutes.
  3. Add tomatoes, reduce heat to 375 F and roast for another 30 minutes.
  4. Remove herbs and liquidize the remaining vegetables adding stock until you reach the desired consistency.
  5. Place soup in an ovenproof dish and bake for a further 20 minutes.
  6. Serve with hot buttered toast.
