Peanut Butter Oatmeal Truffles

Ingredients
  1. 1 cup butter, softened
  2. 3/4 cup brown sugar
  3. 1/4 cup Sue BeeĀ® Clover Honey
  4. 1/4 cup peanut butter
  5. 1 teaspoon vanilla
  6. 1 1/2 cup flour
  7. 1/2 cup instant oatmeal
  8. 1 cup cup mini semi-sweet chocolate chips
  9. 1-1/2 pounds dark chocolate candy coating, coarsely chopped
  10. 1/4 cup chocolate sprinkles, optional
Instructions
  1. Cream butter and sugar.
  2. Add the Sue Bee Honey, peanut butter, vanilla, flour, oatmeal and mix until well combined.
  3. Stir in the chocolate chips.
  4. Roll into 1" balls and place on a waxed paper lined cookie sheet and freeze for 30 minutes.
  5. In a microwave, melt candy coating as directed on the package. Heat until smooth.
  6. Dip the balls in coating. Garnish with chocolate sprinkles.
  7. Place back onto the waxed paper lined baking sheets.
  8. Freeze until firm about 10 minutes
