Cake Ingredients
  1. 2 tablespoons Sue BeeĀ® Honey
  2. 1 package yellow cake mix
  3. 1/4 cup orange juice
  4. 3/4 cup water
  5. 1/3 cup margarine or butter
  6. 3 eggs
Filling Ingredients
  1. 1/4 cup Sue BeeĀ® Honey
  2. 2 tablespoons cornstarch
  3. 1 cup reserved canned pear liquid
  4. 1/4 cup orange juice
  5. 1 cup pears
  6. 1 cup coconut
  7. 1/2 cup pecans
  8. 1 egg yolk
  9. 1 Tbsp. margarine or butter
Frosting Ingredients
  1. 2 cups whipping cream
  2. 1 teaspoon vanilla
  3. 1/2 cup powdered sugar
Cake Directions
  1. Heat oven to 350 F.
  2. Grease and flour two 8 or 9 inch round cake pans.
  3. Mix all above ingredients until blended and beat at high speed for 2 minutes.
  4. Pour into prepared pans and bake for 25 to 35 minutes, or until center is done.
  5. Cool in pan 15 minutes.
  6. Remove from pan and cool completely.
Filling Directions
  1. In a saucepan, combine cornstarch, pear juice, orange juice and SueBee Honey.
  2. Bring to a boil over medium heat, stirring constantly.
  3. Continue cooking and stirring for 1 minute.
  4. Blend small amount of mixture with egg yolk.
  5. Add to saucepan, blending well.
  6. Cook just until bubbly, stirring constantly.
  7. Cool completely.
Frosting Directions
  1. Beat the frosting ingredients until firm peaks form. (Do not overbeat.)
  2. Slice each cake layer in half to make 4 layers.
  3. Spread filling between each layer as you put the cake layers together.
  4. Frost entire cake with frosting and refrigerate at least 2 hours before serving.
