Pineapple-Upside Down Cake

TOPPING
  1. 1/3 cup Sue BeeĀ® Honey
  2. 1/4 cup oleo
  3. 1/2 cup pecans
  4. 7 (about 7 oz) pineapple rings
  5. maraschino cherries
CAKE
  1. 1/2 cup Sue BeeĀ® Honey
  2. 1 1/2 cups flour
  3. 1/2 cup sugar
  4. 2 1/2 teaspoon baking powder
  5. 1/2 teaspoon salt
  6. 2/3 cup milk
  7. 1/4 cup oleo
  8. 1 egg
  9. 1 teaspoon vanilla
TOPPING
  1. Pour melted oleo in a 9 x 9 inch baking pan.
  2. Layer with Sue Bee Honey, nuts and pineapple.
  3. Place a maraschino cherry in the center of each pineapple ring, if desired.
CAKE
  1. Combine all ingredients.
  2. Mix on low speed until moistened.
  3. Continue beating on medium speed for 2 minutes.
  4. Pour batter evenly over pineapple layers.
  5. Bake 45 to 55 minutes or until a toothpick inserted in the center comes out clean.
  6. Cool in pan 2 minutes.
  7. Run knife along edges of pan.
  8. Invert pan on serving dish and remove.
  9. Garnish with whipped cream, if desired.
