Ingredients
2 tablespoons Sue Bee Honey
1 1/2 cups whole wheat flour
1/2 cup unsweetened dried shredded coconut
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup mashed banana
3 tablespoons vegetable oil
Directions
  1. Mix together flour, coconut, baking powder, baking soda and salt in a bowl.
  2. Combine banana, oil and honey.
  3. Stir into flour mixture quickly but gently until just combined.
  4. Do not overmix (Batter will be rough or lumpy and stiff).
  5. Spread batter evenly in a lightly greased 8 x 4 inch loaf pan.
  6. Bake in 350 degree oven 45 to 50 minutes until tester inserted in center comes out clean.
  7. Cool in pan 10 minutes, turn out of pan and cool completely on rack.
  8. Wrap in waxed paper and store overnight before slicing.
  9. If keeping for longer than 2 days, refrigerate.
