Spicy Thai Noodle Salad

Ingredients
  1. 1/3 cup Sue BeeĀ® Honey
  2. 1 lb soba noodles
  3. 1 1/2 cups cilantro
  4. 1 1/2 cups honey roasted peanuts
  5. 16 green onions
  6. 4 cups peas
  7. 5 red bell peppers
  8. 1 tablespoon grated fresh ginger
  9. 1 1/2 teaspoons cayenne
  10. 3 tablespoons rice wine vinegar
  11. 4 tablespoons balsamic vinegar
  12. 6 tablespoons soy sauce
  13. 4 tablespoons canola oil
  14. 3 tablespoons sesame oil
  15. 2 limes
Instructions
  1. Cook pasta in a large pot of salted water. Check cooking directions, soba noodles can cook literally in minutes.
  2. Drain pasta well. Let pasta dry a bit or water on the pasta will dilute the dressing.
  3. Whisk Sue Bee Honey, sesame oil, canola oil, soy sauce, vinegars, ginger and cayenne in a small bowl to blend.
  4. Season with salt.
  5. Heat a few tablespoons of dressing in saute pan over medium high heat.
  6. Add peppers to pan for about 2 - 3 minutes to lightly soften, they should still be crunchy.
  7. Add all other ingredients to pasta along with remaining dressing. Mix salad well, you will probably need to use your hands.
  8. Garnish with lime wedges.
  9. Serve right away or chill as long as overnight.
  10. Add peas shortly before serving.
