Strawberry Champagne Soup

Ingredients
  1. 2 tablespoons Sue BeeĀ® Honey
  2. 10 ounces champagne
  3. 8 green peppercorns
  4. 1/4 teaspoon kosher salt
  5. 1 cinnamon stick
  6. 1/2 cup sugar
  7. 8 ounces orange juice
  8. 4 ounces water
  9. 2 pints strawberries
  10. 1 tablespoon lemon juice
Instructions
  1. Bring Sue Bee Honey, water, orange juice, sugar, cinnamon stick, salt and green peppercorns to a simmer.
  2. Let stand for one hour.
  3. Strain mixture through a fine-meshed strainer and pour over the strawberries.
  4. Put the strawberries in a blender.
  5. Puree until mixture is smooth.
  6. Stir in the lemon juice and champagne.
  7. Serve chilled.
