Sweet Potato and Smoked Chile Soup

Ingredients
  1. 1/4 cup Sue BeeĀ® Honey
  2. 1 tablespoon butter
  3. 1 medium onion
  4. 2 garlic cloves
  5. 4 cups chicken stock
  6. 3 medium sweet potatoes
  7. 1/2 cup fat-free half-and-half
  8. 1 tablespoon chipotle chile in adobo
  9. salt and pepper
Instructions
  1. In a large saucepan, cook onions and garlic in butter until translucent, about 4 minutes.
  2. Add stock and potatoes, and simmer until tender, about 45 minutes.
  3. Add Sue Bee Honey, cream, and pepper, remove from heat and puree until smooth (I used my immersion blender).
